Types of Ube Cake Explained

Not all ube cakes are the same. Knowing the difference helps when ordering.

How to Spot an Authentic Ube Cake

As ube has gone mainstream, plenty of "ube" cakes are really taro, purple sweet potato, or plain sponge with food colouring. Here is what to look for.

Ube Chiffon Cake Recipe

⏱ 30 min prep · 45 min bake · 🔴 Advanced · Makes 1 x 8-inch cake (10 slices)

This is the traditional Filipino version — light, airy and naturally purple. Chiffon cake is technique-heavy but the method below is written for first-timers.

🥣 Dry & Wet

  • → 150g cake flour, sifted
  • → 150g caster sugar, divided
  • → 1½ tsp baking powder
  • → ½ tsp salt
  • → 6 large eggs, separated
  • → 80ml vegetable oil
  • → 120ml coconut milk or whole milk

🟣 The Ube Part

  • → 150g ube halaya (purple yam jam)
  • → 1½ tsp ube extract
  • → ½ tsp cream of tartar

No halaya? Use 3 tbsp ube powder mixed with 100ml warm milk into a thick paste, plus an extra 30g sugar.

Method

  1. 1Preheat the oven to 165°C. Have an ungreased 8-inch tube pan ready — the batter needs to grip the sides to rise properly.
  2. 2Sift the cake flour, baking powder, salt and half the sugar together into a large bowl.
  3. 3In a separate bowl whisk the egg yolks, oil, coconut milk, ube halaya and ube extract until completely smooth and evenly purple with no lumps of jam.
  4. 4Pour the wet mixture into the dry and whisk just until no flour streaks remain. Overmixing kills the lift.
  5. 5Beat the egg whites with the cream of tartar until foamy, then add the remaining sugar gradually and beat to stiff, glossy peaks.
  6. 6Fold one-third of the meringue into the ube batter to loosen it, then fold in the rest in two additions using a light hand.
  7. 7Pour into the tube pan, run a skewer through the batter to pop air pockets, and bake 45–50 minutes until the top springs back when pressed.
  8. 8Invert the pan immediately onto a bottle neck and cool completely upside down. Only then run a knife around the edge to release.

💡 Make It Ube Macapuno

Slice the cooled cake horizontally, spread a layer of ube halaya, then scatter over drained macapuno strings before reassembling. Finish with whipped cream and more macapuno on top. This is the version served at Filipino birthdays.

Common Questions

How much does ube cake cost in Dubai?

Typically from around AED 70 for a smaller cake up to AED 140 or more for larger celebration sizes, depending on the bakery and whether macapuno or extra layers are included.

Can I make ube cake without fresh ube?

Yes — and most bakeries do. Ube halaya and ube extract are the standard base even in the Philippines, and give a more consistent colour and flavour than fresh yam alone.

Why did my chiffon cake collapse?

Almost always one of three things: the pan was greased, the meringue was underbeaten, or the cake was not cooled upside down. Chiffon needs to hang inverted while cooling or its own weight compresses it.

How long does ube cake keep?

Two to three days at room temperature in an airtight container, or up to a week refrigerated. Cakes with cream frosting or macapuno should always be refrigerated — important in the UAE climate.
